Russia - Black Bread
I had intended to make a bit more for my Russian dinner, but this was the last recipe I tried before heading home for the Christmas holidays so I sort of ran out of time. However, this bread was very good, and we were able to eat it up with all sorts of things.
Obviously, my bread did not turn out as dark as the recipe intended, but I think that's partly because I used rye flour, not pumpernickel flour (the recipe said I could use either), and partly because I had to use regular cocoa powder since I couldn't get black cocoa. Regardless, it tasted very good, and I quite liked the sort of licorice flavour the fennel gave it.
I think over all this was one of the most successful breads I've made for this project, and since it wasn't too difficult, I'll definitely be making it again.
