Mexico - Chicken Quesadillas

Alright, well, time is officially ticking for me to finish up the posts for this project, and seeing as this was my New Years resolution last year, I'm planning on getting all of these done by the time 2019 rings in!

These Mexican chicken quesadillas were the last dish I made back in October, and this has to be one of my favourites of all the dinners I've made. I made several of them at once, and so we were able to freeze a few of them and have leftovers for the next few days, and honestly they were just as delicious when they were reheated. I do think that I definitely could have used more cheese, particularly because I wasn't able to find queso fresco, but they were still very good. I was also very happy with the guacamole which was included with the recipe I used, and I think I'll definitely be making both again.

Definitely the hardest part of making this meal was flipping the quesadillas over in the pan. I haven't really made omelettes or pancakes or that kind of thing before, so it's not really a technique I'm used to, but I imagine that if I make these more often I'll get better as it as I go.

I was very happy with this dinner and I will absolutely be making this one again!
