Spain - Paella

At last I'm caught up on all posts for the summer, which brings us to the end of August! This dinner was a rather special one, because I was able to make this Spanish paella for my family when I went home for a week.

It turns out there are a lot of differing opinions on what can and cannot be considered a true paella, and so I decided for this week to simply ignore all the contradictions and just pick a recipe that sounded tasty, since it's not really the point of this project to be absolutely authentic. So even if some may not call this a paella, it was very tasty, and had so many different flavours going on. It also wasn't all that complicated, it just required a lot of chopping and stirring, since the rice kept trying to stick to the bottom of my brother's special cookware. The one key thing I would say about this recipe is that it calls for far too much parsley. The amount you see in the photo is not even a quarter of the amount that was called for, and even that was a little too much. Other than that, it was a lovely dinner, and I really enjoyed cooking it for my family and sharing with them a little bit of what I've learned through this project so far.
