El Salvador - Pupusas

This recipe is one that I have to admit is not one I'm totally sure I made properly. Just a couple weeks ago, I made Pupusas de Queso from El Salvador, and while they were very tasty, they weren't exactly what I was expecting.

The main thing about these pupusas that surprised me is that they were much chewier than I had anticipated. I had expected them to be closer to the texture of tortillas, since they are made in a similar way, but they were quite chewy, and I'm not entirely sure why. Maybe it was the cheese filling, or maybe I used too much oil in the pan when frying them up, or maybe I didn't buy quite the right kind of flour, but regardless of the unexpected texture, they were quite tasty and made a nice lunch and breakfast the next day. I did take the recipe's suggestion to add a green chili to the cheese filling which was a fantastic idea, as it added a very nice kick.

While I did enjoy the pupusas, I'm not sure that this is a recipe I would try again, since I'm not entirely sure whether or not I made them correctly, and if I didn't, where I went wrong, so I'm not even sure what I would change. I will say, though, that I will likely be adding green chili's and cheese to many other dishes from now on.
