The Philippines - Chicken Adobo
Well I'm back on the train after my wonderful week away, so what better time to catch up on some more of these posts!
This next dish of Filipino chicken Adobo was so delicious, and went well with so many other dishes I had through the week. It also was perfect with some simple rice, and was very easy to make. In fact, I've already tried the same recipe a few more times with little variations here and there (such as adding ginger), and every time has been amazing. This was certainly one of my favourite recipes so far. It has a lovely tangy flavour without being too sour, and the peppercorns gave a surprising bit of kick to the dish which I wasn't expecting. While this recipe didn't provide much in the way of new techniques for me to learn, it was nice to learn a new combination of flavours I could marinate meat in and use for a variety of other dishes, which is kind of exciting!
I was exceptionally happy with this particular dinner, and I loved the versatility of the recipe and of the dish itself. I will absolutely be making this meal over and over for a very long time.
