USA - Seafood Gumbo

We're staying in North America for another week here in early July. Since the week before I made a Canadian dish, I thought it was only fair I gave a nod to our neighbours to the south. However, I wanted to make something from a uniquely American culture, such as Cajun or Creole, and so I decided to make this incredible Seafood Gumbo.

I think the biggest challenge with this particular recipe, was that I have never had gumbo before, and I wasn't entirely sure what was in it. Its the sort of dish I've heard about, but it is not commonly found up here, so I wasn't really sure if I was doing things wrong or not. For example, I had never even seen okra before, which is a key ingredient, and so I had to look up how to cook it. I hadn't expected it to be that slimy, or that it would cook down to such a small amount. In the end though, it was very tasty, and I was very pleased with the result. I was surprised at just how much seafood went into the dish as well, but the variety made for quite a special meal. Yet again, I was very happy that I had lots of gumbo leftover to have through the week. If I were to make it again though, I would definitely add much more spice.
