Haiti - Griots

I've got another train journey now, so let's get a couple more of these entries under our belt! For my Haitian dinner, I made griots, which are a glazed, fried pork dish, which was pretty easy to make, and was absolutely delicious!

As you can tell from the picture, this is a very colourful and flavourful dish that went very well with rice, and even in soup!
The griots had a nice sour, citrus-y flavour which was very nice and I was amazed how little time this actually took to prepare. Of course the pork sits in the marinade for quite a long time, and it fried in the oven for a couple of hours, but the actual process of mixing everything together was fairly straightforward, and didn't take much time at all! The best part about these Haitian griots was that the recipe made quite a lot of them, and so I was able to add a little bit of the dish at a time to a variety of meals that I made that week. Although they have their own distinct flavour, I found that they were quite versatile and I didn't get bored of eating them in so many things. I was very happy with this dish in the end, and I think this is yet another recipe I will reuse in the future!

FIRSTS THIS WEEK:

  • Cooked with shallots (often I've had to use a substitute because I couldn't find them)
  • Fried pork
