United Kingdom - Roast Chicken

Last week we moved slightly north from last time's Irish stew, and I ventured to try something completely new to me- a proper roast chicken dinner from the United Kingdom.

I will admit that I was very nervous about this particular recipe, as I have never made any kind of roast dinner before, and I was afraid that I would under cook it, or over cook it, or otherwise screw it up. So I followed the recipe very closely, and it took hours, but everything worked out in the end! The chicken and roast vegetables I cooked it with were both delicious, and there were plenty of leftovers for several days afterwards. The best part of making this, though, was that I felt so unbelievably proud of myself. This kind of thing is exactly why I started this project- to learn brand new things and become much more confident in the kitchen! In both ways, this project has been a huge success so far!
