Ireland - Beef and Guinness Stew

That's right, two posts in one day! I think that's the only way I'll ever get back on track.

As you probably guessed, this particular dinner was made for St Patrick's day this past Saturday, and it was absolutely incredible! This is such a hearty, flavourful stew, which wonderfully rounded out our St Patrick's day festivities of drinking Guinness and watching Father Ted.

Overall, I would say that this stew was more time consuming than difficult, even though there were several things I was trying for the first time with this recipe, particularly cooking beef that was not ground, and browning the meat before adding it to the stew. Although these new things were intimidating, they went very well, and the stew was a success! The recipe also made a huge amount of food, which lasted us for several days. In fact, the trickiest part of this entire dish was stirring it once the potatoes were added, because my pot was almost not big enough, and the stew filled it almost to the brim! Amazingly, hardly any was spilled, except for when we tried to serve it, of course. Guess I'm going to need a bigger pot soon!

I was very happy with this delicious stew, and I will definitely be making it again!
